Simmering the potatoes in vinegar imparts a tang not unlike that imparted by salt-and-vinegar potato chips. Grilling gives the potatoes a nice charred flavor.

Grilled Vinegar & Salt Potatoes
Ingredients:
- 2 cups white vinegar
- 1 pound waxy potatoes* cut into 1/4-inch slices
- 2 tablespoons extra virgin olive oil
- 1 teaspoon flaky sea salt, plus more for seasoning after
- 1/4 teaspoon freshly ground pepper
* waxy potatoes = Potatoes in this category hold their shape after cooking, so they’re great for making potato salads and scalloped potatoes. They’re not good for mashing, baking, or making fries. Types of boiling potatoes are new potatoes, fingerling potatoes, round white potatoes, and round red potatoes.
Directions:
- Pour the vinegar into a medium saucepan.
- Arrange the potatoes in the pan so the vinegar covers them completely. Bring to a boil, then reduce the heat and simmer for about 5 minutes, or until the potatoes are barely fork tender, so they hold their shape, and don’t fall apart on the grill later.
- Let the potatoes cool in the vinegar for 30 minutes.
- Drain well, then very gently toss with olive oil, salt, and pepper.
- Heat the grill to medium high. Grill potatoes, covered if possible, until golden on one side, then flip and grill the other side – roughly 3 – 5 minutes per side.
- Sprinkle with salt and serve.
Serves 4
