This Cookbook Club cook has always loved upside down cakes, like the pineapple upside down cake variety…. but Sarah at Blue Ridge Baker made this cake for her dad’s birthday, and she adapted it from a Martha Stewart recipe… and it’s just sooo wonderfully beautiful as well as inspiring!

It has so many great things going on; beautiful rhubarb top, and a crisp crumb layer for a crust… Is this the ultimate father’s day cake?  Can you wait to make it or do you just need to do it NOW???
